Mango Bread

I remember the first time I ever ate a mango. I was about 5 years old and too short to reach the sink so I had to stand on a stool. Once I got my balance my mother placed the peeled mango in my hand and said, "Go ahead." From that day on I was hooked. I'll eat anything with mango in it. This recipe is really 'ono, but I didn't use raisins because I didn't have any.

2 c flour
2 tsp baking soda
1/4 tsp salt
3/4 to 1 c sugar
1 tsp cinnamon
1/2 c raisins
1/4 c walnuts
3/4 c vegetable oil
3 eggs
2 c chopped ripe mangoes
1 tsp vanilla
Combine dry ingredients in a large bowl. Make a well and add remaining ingredients. Mix. Pour into greased and floured loaf pans. Bake at 325degrees for 1 hour. Makes 2 loaves (7-3'8 by 2-1/4) or 1 large loaf.
