In September 2006, viewers tuned in to catch the premiere of "E ‘Ai Kākou!", a local cooking show promoting healthy eating using Hawaiian ingredients. We have varied a little in our recipe format in order to showcase all of the recipes featured in this first episode, allowing you to combine them for a complete and healthy meal or enjoy each dish on its own. We hope you enjoy the collection of ‘ono recipes offered here: Linalina Lū‘au Moa, Taro Patties, Salad, and chicken laulau.

Linalina Lū‘au Moa
Crepes
Chicken Lū‘au
Grated Coconut

Crepes:
1 cup flour
1 ¼ cup water
2 eggs

1. Mix flour, water, and eggs in bowl to make a thin batter.
2. Heat non-stick (preferably 4" pan)
3. Ladle in just enough batter to make a thin crepe. Makes approximately 12 crepes.

Lū‘au Stew:
1 lb lū‘au leaves
1 ½ lb. boneless skinless chicken thighs
Cream of chicken soup
Small amount of oil

1. Cook lū‘au in water till fully done (if not fully cooked, it will be mane‘o). Drain.
2. Cut chicken in ½" cubes.
3. Saute in pan till fully cooked.
4. Add cream of chicken soup
5. Add lū‘au. Set aside.

*** 1 pound of lū‘au leaves will equal approximately  2 cups cooked lū‘au.

Directions:
Place crepes on a plate. Put ¼ cup of chicken lū‘au on crepe and roll up. Sprinkle with toasted coconut.

Taro Patties
2 cup cooked taro (may also freeze cooked taro and then grate)
1 cup ‘ahi, tuna (or other cooked fish)
1 carrot, minced
1 stalk celery, minced
½ onion, minced
2 eggs
1-2 tablespoons oyster sauce

1. Mix all ingredients together.
2. Form into 6 patties.
3. Use a little PAM or olive/canola oil to heat patties.
4. Alternative: Broil in oven. Remember to turn over.

Salad
1 cup cooked kalo, cubed
1 cup cooked ‘ulu, cubed
1 cup cooked ‘uala, cubed
6 oz fish cake (red and white) or other cooked fish
1 carrot, minced
1 stalk celery, minced
½ - 1 cup lowfat mayonnaise
½ - 1 cup lowfat Italian salad dressing
Salt to taste

Mix warm ‘ulu, ‘uala, and kalo with the Italian salad dressing. Add the rest of the ingredients and mix.

Laulau
1 lb lū‘au leaf, thoroughly rinsed
1 ½ lb boneless, skinless chicken thighs
1 lb salmon fillet cubes
2 sweet potatoes, cubed
Pa‘akai
Tī leaves

1. Divide leaves in 6.
2. For each laulau, use 1/6 of chicken, 1/6 of salmon, 1/6 of sweet potato
3. Sprinkle with pa‘akai
4. Wrap in tī leaf
5. Steam approximately 2 hours. Need to ensure that lū‘au leaves are cooked thoroughly.
